Thymus Capitatus, a variety common across Greece’s rocky coastlines, grows into a woody purple shrub each Spring. It prospers in several maritime areas of the Mediterranean, but it can taste very different depending on the place of origin. Its blossoms are hard to find even at well-informed spice shops. The harvesters trim the blooms one by one, following a laborious process that allows for preserving the herb’s aroma for longer. The most advanced tool to ever touch our Thyme is a pair of scissors!
Floral and tingling, this Thyme is best friends with lemon, garlic, and olive oil. A combination capable of taking plain roasted potatoes to another level. Crush with your fingers before use to release its fragrance. You’ll need 2-3 blossoms per portion.
Excellent for making chicken brine, marinating lamb, or pickling vegetables. You can add a couple of thyme blossoms to your herbal infusions: they pair well with peppermint and have digestive, antiseptic, and antioxidant properties.
