A Door Homemade Granola Recipe

We love homemade food, and every Friday morning we gather in the store for our weekly team meeting - always with breakfast and coffee in hand. The first thing we do is prepare a bowl of creamy yogurt with our favourite homemade granola, topped with seasonal fruit, oils and vinegar.

This isn't just a bowl of yogurt. It's a little ritual we love - something that delights us with its taste, texture, and simple beauty. Paired with our morning coffee, it's the perfect start to our Friday, a small moment we always look forward to in our team gathering.

3 dl rolled oats
1 dl pumpkin seeds
1 dl sunflower seeds
1/2 dl sesame seeds
1 1/2 dl of any kind of nuts (roughly cut)
1/2 dl almonds
Seeds from 5 cardamom capsules
1 ts cinnamon
1 pinch of flaky sea salt
3 tbs maple syrup or your choice of sweetener
3 tbs olive oil

Let's break it up:

In a large heated pan roast all the dry ingredients till golden brown and a lovely smell appears. Be sure to use medium heat not to burn your granola. Wait with adding spices till the last couple of minutes. Pour maple syrup and olive oil into the pan and mix it well with a wooden spoon. Roast only for a minute or so. Then move granola to the baking sheet and let it cool off.

For our yoghurt bowls we always use a full fat greek yogurt and dress it with a lovely jam, fresh fruit/berries, granola and a drizzle of fruity vinegar and olive oil. Our favorites at the moment
are ginger vinegar and mandarin olive oil from our friends at Oliviers & co.

We hope you will enjoy it as much a we do.

With love,

A Door
